In the ordinary way, recipes for wines made entirely from grapes are not a practicable proposition. This is because grapes are merely crushed and fermented without either sugar or water being added. Provided you have enough grapes, making wines from them is the simplest winemaking of all-that is, of course, provided they are fully ripe. Small unpruned bunches often contain a lot of small undeveloped fruits between the large juicy ones and these must be removed before the bunches are crushed. The whole bunches, stalk as well, are used as these add something to the wine. The yeast forming the bloom on your grapes may be the kind that will make excellent wine, but we cannot be sure of this owing to the near-certainty that wild yeast and bacteria are present with it. As we have seen in previous chapters, we must destroy these yeasts and bacteria and add yeasts of our choice to make the wine for us.
You will need at least twenty pounds of grapes to be assured of a gallon of wine-and this amount may not make one gallon of wine, though it make one gallon of strained ‘must’. Therefore the more grapes you have the better.
If enough grapes are available, the process is as follows:
METHOD: Put all grapes in a suitable vessel and crush them, making sure each grape is crushed. Measure as near as you can or judge as accurately as possible the amount of pulp you have and to each gallon allow one Campden tablet or four grains of sodium metabisulphite. Dissolve this in an egg cupful of warm water and stir into the pulp and leave for twenty-four hours.
After this, give the mixture a thorough mixing and churning and then add the yeast. The mixture should then be left to ferment for five days.
Following this, the pulp should be strained through a strong coarse cloth to prevent bursting and wrung out as dry as you can. The liquor should then be put into jars and fermented the same ways as other wines.
A good plan when doing this is to mix a quart of water with grape pulp and to crush this well to get as much from the skins as you can. If you do this, you must add one pound of sugar and dissolve it by warming the juice just enough for this purpose. This thinner juice may be mixed with the rest but before the better quality juice is put into jars.
Where grapes only are used with water (as suggested above) it must be borne in mind that to get enough alcohol for a stable wine we must have between two and two and a half pounds of sugar to the gallon. Juice crushed from grapes rarely contains this much, therefore it would be wise to add one pound when the fruit is crushed and before the juice is put into jars. If the wine turns out dry, it may be sweetened.
We may use a hydrometer to find the sugar content so that we know how much to add to give the amount of alcohol we need, but this is not for beginners without previous experiences in this sort of thing. The better plan is to follow my suggestions above, and if the wine is dry to sweeten it and then preserve it with Campden tablets or metabisulphite.
Since the color comes from the skins, if we want a red wine from black grapes we ferment the skins as directed earlier in this chapter. A white wine from black grapes is made by crushing the grapes and pressing out the juice and fermenting the juice only. The difference in the process already described is that instead of fermenting the skin for five days, the juice is pressed out after it has been allowed to soak for twenty-four hours.
If you happen to be making some of the fruit wine such as elderberry, plum, blackberry or damson, at the same time as making grape wine, it would be a good idea to put the strained fruit pulp which would otherwise be discarded into the ‘must’ of the other fruit and let it ferment there.

At first, home beer brewing was illegal in America, before the laws changed and made America one of the top producing beer countries on the 90′s… and now we see the decline once again with the tough economic times forcing many companies out of business and into bankruptcy. This has of course led to more and more people drinking to drown their sorrows, so to speak, but many more are actually turning this lust for beer into a productive past time by starting their own home brewery… and what a way to go!
Now we all know that back way way in the olden days, home beer brewing was a major and accepted pastime practiced by the colonial people. One thing you might not know that even famous people such as the Great George Washington was an avid home beer brewer, as was Thomas Jefferson and friends!
However, there was a time of prohibition that was devastating to the American population. Prohibition meant that it was illegal to brew your own beer, and heavy fines where placed on people who broke this law… and what a shame that was… some people even went to prison for having a home brewery! Can you imagine a life without beer? Everybody had to content with a watered down lifeless beer – well not really beer but something which was a very poor substitute for it. Nothing substantially alcoholic was allowed and few took efforts in making their drinks less alcoholic but tasty. Unfortunately the American people had to suffice and deal with prohibition. This then led to shop owners renaming all equipment so it couldn’t be associated with running home brewery and started selling it on the sly to hardcore supporters of brewing beer at home. This was quiet easy because the equipment is fairly standard, including buckets, hosing, pots, pans, and other tidbits. The situation varied from state to state. In some states, only those selling home brews were caught while in some, brewing for personal consumption also meant facing legal charges. Good thing those laws have been since relaxed and prohibition has truly been and gone!
One of the pioneers of legalized home beer brewing was Charlie Papazian. He was the man responsible for teaching thousands of others how to brew their own beer at home, and obtain the permit they needed for doing so (as it was still illegal to brew beer at home without one). Some say that his work led to the laws eventually being completely relaxed, but it is unclear as most history is so. Nonetheless, 1935 was a great year for home brewers and changed the way the world views home brewing today.
But thankfully, in 1978, Jimmy Carter rescued the doomed souls of beer loving Americans and signed Senate Amendment 3534 allowing households to brew their own beer as long as they don’t go beyond 200 gallons a year. After the lifting of the prohibition on alcoholic beverages, it was home brew beer enthusiasts who worked hard to revive the brewing industry. Today, there are over 1,463 breweries in the United States, a much improved American home brewing state.

If you’ve got a hard time quitting drinking, this article is for you. This isn’t AA but sit down and read on to find out about the alcohol cure without using Alcoholics Anonymous.

There aren’t any vitamins or minerals in 100% of alcoholic drinks. You don’t need it. Toss that flask in the trash bin right now and dump your vodka down the drain, that’s all you need! If you really need the alcohol, it might be too hard for you to quit straight up like that and you should see a doctor first.
Always envision success. Remember what you are striving to achieve. You want to lose some pounds or just get back your bodily hygiene and stop having your bad breath. Forget about the alcohol.
So, that is the fact. Not too hard, eh? Really, in the end, that’s all there is to it. Just do it. In the end when you succeed, you’ll only have yourself to thank for and you’ll be really glad you took this challenge on.

BBQ chicken is one of the most popular meats ever enjoyed all over the world. Chicken is usually affordable, will fill you up, and is an excellent way to get protein. Whether you decide to cook it on the BBQ grill, smoker or just in the oven it is easy to cook, so anyone can make it. The problem is there are a lot of recipes out there and how do you know which are the good ones? Well there are some general ingredients that let you know it is going to be a good recipe that you and your guests will enjoy at your next BBQ.
So a recipe that should be good will have some of the following ingredients; garlic, mustard, ketchup, cumin, some even use beer, sugar, cinnamon, Worcestershire sauce – and many more. If it has an Asian twist look for honey, Hoisin sauce, ginger and soy sauce. There is quite a range of ingredients and it is a pretty flexible recipe, what it comes down to are what ingredients appeal to you and your taste. There is a great recipe from a show called ‘Paula’s Home Cooking’ where Paula Deen makes a recipe called Deen’s Brothers BBQ Chicken. It can be cooked in the grill or in the oven.
Recipe: one whole chicken cut into 8 portions (chicken weight about three and a half pounds), orange juice – 2 tablespoons, Ketchup – 1 cup, liquid smoke – 1/4 teaspoon, dark brown sugar – 1/4 cup (packed), dry mustard powder – 1/2 teaspoon, cayenne pepper – 1/4 teaspoon, Worcestershire sauce – 1 teaspoon. Prepare the oven by preheating to 375F or the grill by using olive oil and brushing it with it. Place in a bowl all of the sauce ingredients (all of them apart from the chicken). Mix well so that they are all combined and then scoop out a third of a cup for basting. Take the chicken pieces and put them in the sauce and toss carefully until they are well coated. Cover the chicken pieces and put on the grill or place them in a roasting pan. Cook for a total of forty to forty five minutes (make sure they are cooked all the way through). After 20 minutes has passed of cooking time baste them with the remainder of the sauce you had set aside.
The great thing about this recipe is that as well as tasting good it is easy! Liquid smoke may pose a problem for some of us more inexperienced grilles, but it is just to give the chicken a smokey flavor without going through a long difficult procedure of smoking the meat. It doesn’t have to be used if you prefer not to.
Also when it comes to the chicken itself you do not have to get a whole chicken if you find it hard chopping one up yourself. Get chicken pieces, thighs, breasts, legs or wings. Thighs in particular are a great option because they are juicy, inexpensive and will cook quicker so you get to do the eating quicker!
